Quiche Dough

Ingredients
   
850g cake flour
425g butter
4 eggs
100ml cream

Method

  1. Work butter into the cake flour to resemble fine mealie meal.
  2. Mix the eggs and cream and cut into the flour and butter mixture.
  3. Work until it forms a dough.

Quiche Wash

Ingredients
   
5 eggs
250ml cream
250ml  milk

Method

  1. Whisk all the ingredients together, season with salt and pepper.
  2. Pour over line and filled quiches.
  3. Bake at 180ºC until the egg has set and light brown on the top.
