MORE CHEESE
This week Chef Niemand makes a plain old Macaroni and Cheese spectacular by adding two more cheeses. Also try this great recipe for stuffed mushrooms. You can roast them in the oven or over the coals at a braai.
Oven Roast Mushrooms
Ingredients: | |
6 | medium size flat brown mushrooms |
80 g | firm blue-vein cheese, crumbled |
125 g | cream cheese |
100 g | mayonnaise |
120 g | sour cream |
80 g | coarsely chopped toasted cashews |
10ml | finely cut fresh chives |
Olive oil |
Method:
- Brush the mushrooms with the olive oil then cook in a pan over medium heat for a few minutes.
- Arrange these mushrooms on a baking tray and set the oven at 160°C.
- Mix the blue cheese, cream cheese, mayonnaise and sour cream together with half of the toasted, chopped nuts.
- Spoon the cheese and nut mixture onto the mushrooms and bake uncovered until heated through.
- Top with rest of nuts and chives, and serve with a green salad or as a side dish at a braai.
