Marinated fillet of beef with coriander and honey

Ingredients:
   
1 fillet of beef, approx 1 kg (Chef prefers Checkers Steakhouse Classic)
20g flat-leafe parsley
30g fresh mint
30g fresh coriander
4 cloves garlic
15g fresh ginger, peeled and sliced
1 chilli, seeded
  Salt
50ml lemon juice
60ml soy sauce
120ml     sunflower oil
15g honey
30ml red wine vinegar
60ml water

Method:

  1. Blitz together all the ingredients in a food processor.
  2. Gently sear the fillet in a medium hot pan on all sides.
  3. Pour marinade over the fillet of beef and marinate overnight.
  4. Pre-heat the oven to 200°C.
  5. Bake in the oven for about 15 – 20 minutes depending on the size of the fillet and how you like it cooked.
  6. Alternatively, you can cook the fillet on a hot grill until done.
  7. Meanwhile, heat the marinade in a small saucepan and simmer for 5 minutes. Slice the fillet of beef and put on a serving plate and serve with the sauce in separate bowl.
