Mango and sweet pepper soup
Serves 6
4 | ripe mangoes |
1 | red or yellow pepper, seeded and chopped |
1 | red onion, thinly sliced |
60ml | chives, chopped (small bunch) |
2.5ml | cayenne pepper |
salt and pepper |
Method:
- Mix all the above ingredients, cover and marinate in refrigerator for 2 hours.
- Puree the mixture, add cold water if the puree is too thick. Pass through a sieve. Refrigerate overnight.
- Serve with heart-shaped crisini bread ‘sticks’.
