Mango and sweet pepper soup

Mango and sweet pepper soup
Serves 6

4 ripe mangoes
1 red or yellow pepper, seeded and chopped
1 red onion, thinly sliced
60ml chives, chopped (small bunch)
2.5ml cayenne pepper
  salt and pepper

Method:

  1. Mix all the above ingredients, cover and marinate in refrigerator for 2 hours.
  2. Puree the mixture, add cold water if the puree is too thick. Pass through a sieve. Refrigerate overnight.
  3. Serve with heart-shaped crisini bread ‘sticks’.
