Grilled strawberry skewers with mint sugar, Greek yoghurt and honey

Ingredients
   
3 – 5 each Strawberries (per skewer)
10ml Olive oil
20g Mint
20g Sugar
50ml Thick Greek Yoghurt
  Honey
  Pistachio nuts (roughly chopped)

Method:

  1. Wash and skewer the strawberries, rub them with oil and grill them.
  2. Blend the sugar and mint together to form a mint sugar.
  3. Sprinkle the mint sugar on the grilled strawberry skewers.
  4. Serve the skewers on a platter with thick Greek yoghurt on the side drizzle with honey and pistachio nuts.
