Crisini dough
This dough was used to shape the heart bread sticks….

630g cake flour
10g instant yeast
10g salt
375ml water, at room temperature
30ml olive oil


  1. Combine flour, yeast, and salt in a mixing bowl.
  2. Add water and olive oil to the dry ingredients – knead into a firm dough.
  3. Place the dough in a lightly oiled mixing bowl. Cover the container with cling film and leave the dough to ferment at room temperature until doubled in volume.
  4. Preheat the oven to 180ºC.
  5. On a floured counter, roll the dough out into a rectangle.
  6. Cut the dough into strips of equal width. A pizza cutter works very well for this.
  7. Roll the strips of dough into thin bread sticks (make heart shapes) and bake on a lightly oiled baking tray for 10-12 minutes or until crispy and light brown.
