Chocolate sponge cake
(Enough for 2 x 20cm cakes)

5 | eggs |
300g | sugar |
125ml | cooking oil |
125ml | lukewarm water |
250g | cake flour |
50g | cacao powder |
Method
- Beat the eggs with a balloon whisk en slowly add the sugar – spoon by spoon.
- Beat well until the sugar is incorporated and the mixture reaches the ribbon stage (keeps its form but not stiff).
- Mix the oil and water and add the the egg mixture.
- Sift the cake flour and cacao three times to incorporate as much air as possible.
- Carefully fold into the egg mixture.
- Bake at 180°C for 25 minutes.
