Chocolate sponge cake

(Enough for 2 x 20cm cakes)

Ingredients
   
5 eggs
300g sugar
125ml     cooking oil
125ml lukewarm water
250g cake flour
50g cacao powder

Method

  1. Beat the eggs with a balloon whisk en slowly add the sugar – spoon by spoon.
  2. Beat well until the sugar is incorporated and the mixture reaches the ribbon stage (keeps its form but not stiff).
  3. Mix the oil and water and add the the egg mixture.
  4. Sift the cake flour and cacao three times to incorporate as much air as possible.
  5. Carefully fold into the egg mixture.
  6. Bake at 180°C for 25 minutes.
