Chocolate Fondant

Ingredients
   
500g dark chocolate
500g     butter
2 eggs
2 egg yolks
60g castor sugar
20g cake flour

Method:

  1. Melt the chocolate and butter together on very low heat or over a water bath.
  2. Beat the eggs, egg yolk and sugar together.
  3. Add the chocolate mixture to the egg mixture.
  4. Lastly fold in the flour.
  5. Butter the ramekins and generously dust with flour or cacao powder.
  6. The mixture makes 21 portions at 80g each.
  7. Bake for 8 minutes at 160°C.
