- Melt the chocolate and butter together on very low heat or over a water bath.
- Beat the eggs, egg yolk and sugar together.
- Add the chocolate mixture to the egg mixture.
- Lastly fold in the flour.
- Butter the ramekins and generously dust with flour or cacao powder.
- The mixture makes 21 portions at 80g each.
- Bake for 8 minutes at 160°C.
