Chicken, mozzarella and tomato bake
Serves 3 – 4

30ml olive oil
400g tin chopped tomatoes
  Basil leaves
4 chicken breasts, skinless
100g mozzarella cheese, rough chunks/slices
50g grated parmesan


  1. Heat some of the olive oil in a saucepan – add the tomatoes and seasoning, cook and stir for about 15minutes until the sauce starts to thicken. Remove from heat and stir in the basil. Use the other olive oil and lightly pan fry the chicken breast.
  2. Remove from the pan and roll in the grated parmesan cheese.
  3. Pour half of the tomato sauce into a large baking dish.
  4. Arrange the parmesan coated chicken on top – add the other half of the tomato and top with sliced mozzarella (or chunks of mozzarella). Remember to only add the cheese in the last 10 minutes.
  5. Bake for 20 minutes until cheese is melted, serve with green salad and crusty bread.
