Checkers Recipe: Roasted Rump Wrap & whipped feta

Flatbread with beef, feta cheese and vegetables with tzatziki sauce, greek style lunch

Ingredients

500g CATTLEMAN Beef Rump, Prepared to your preferred degree of doneness.

Seasoning for rump

500ml red or white cabbage, shredded

2ea carrots, peeled and grated

200g cherry tomatoes, halved

Whipped Feta

50 g feta

125 ml plain yoghurt

60 ml lemon juice

Milled black pepper

Method:

  1. Slice cooked rump into thin slivers.
  2. Combine cabbage, carrots and tomatoes
  3. Blitz feta, yoghurt, lemon and black pepper together in a food processor until smooth
  4. Spread the whipped feta onto 4x wraps, top with shaved rump and prepared vegetable filling.
  5. Season as necessary.  Roll the wraps and enjoy!
