Cheesy Mac and bacon
with Dijon Mustard

INGREDIENTS
375g macaroni, cooked according to packet instructions
50g butter
8ea rashers streaky bacon
50g cake flour
350ml milk
100ml cream
75g crumbled gorgonzola cheese
100g coarsely grated parmesan
5ml Dijon mustard
10ml chopped flat-leaf parsley
15ml scissor cut fresh chives
METHOD
- Melt the butter in a medium saucepan. Cook the bacon until crisp on both sides. Remove the bacon from the saucepan and keep aside.
- Add the flour to the above saucepan, stirring until mixture thickens and bubbles. Gradually add the milk and cream, cook, stirring until mixture boils and thickens. Remove from the heat and stir in the two cheeses. Stir until melted. Add mustard and herbs. Combine creamed mixture with drained pasta.
- Pour pasta mixture into a lightly buttered oven proof dish; top with the bacon rashers. Bake for 10-15 minutes uncovered at 180°C or until browned.
