Back to school lunch box treats 2 (Apple, cinnamon, bran and nut muffins)


Apple, cinnamon, bran and nut muffins
Makes 12

40g  bran
40g  high fibre cereal
10ml  cinnamon
280g  cake wheat flour (500ml)
105g  castor sugar (125ml)
2,5ml  cream of tartar
15ml baking powder
15ml  honey
150g  butter
4 Granny Smith apples, grated
3 egg whites
100g  pecan nuts, chopped
Ingredients for crumble
20g  bran
30ml  castor sugar
15ml cinnamon sugar


  1. Mix together all the dry ingredients.
  2. Cream the butter and honey together in an electric mixer.
  3. Add half of the dry ingredients to the creamed mixture and mix well. Then add the other half.
  4. Fold in the grated apples and nuts – do not over mix!
  5. Whip the egg whites to soft peak and fold into the above muffin mixture.
  6. Scoop the muffin mixture into greased muffin pans.
  7. Mix all the ingredients for the crumble top layer together and sprinkle on top of the muffins.
  8. Bake in a preheated oven at 180°C for 20-25 minutes or until cooked.

Skewer some fruit onto a stick.
