Baby marrow and spinach bake
Serves 6 to 8

This week Chef Niemand shares a recipe for fillet steak with a mushroom topping that is absolutely amazing. The vegetable bake is also a great way to get the kids to eat their vegetables.

375ml roughly grated baby marrow
375ml spinach (frozen or blanched and refreshed), finely chopped
1 onion, chopped
100ml     butter
50ml cake flour
250ml milk
2.5ml mustard powder
125ml feta cheese
4 eggs, beaten


Fry the onion in the 100ml butter.
Add the cake flour and mix well.
Whisk in the milk until the mixture thickens.
Add the mustard powder.
Fold in the feta cheese, vegetables and beaten eggs.
Bake at 160°C for 40 minutes until firm and done.
Garnish with roasted cherry tomatoes and crumbled feta cheese.
Serve warm.

Chef’s TIP
You can basically use any type of green vegetable – even broccoli if you want to add more texture. Chef quickly fried the baby marrow in a saucepan before she added it to the bake.
