Chicken with Portuguese style marinade

Ingredients:
   
1 large chicken
15ml cracked black pepper
15ml ground cumin
15ml     lemon juice
30ml olive oil
2.5ml chili powder
2.5ml paprika
  Pinch of cayenne pepper
1 clove garlic, crushed

Method:

  1. Cut along both sides of the chicken’s backbone. Discard the backbone and insert metal
  2. skewers through each thigh and opposing wing.
  3. Combine all the marinade ingredients in a bowl and rub over the chicken. Grill on the
  4. barbeque (or in the oven at 160°C) for 20 minutes per side or until tender.
  5. Serve with mayonnaise roasted potatoes and balsamic purple onion petals.
