Chicken with Portuguese style marinade
Ingredients: | |
1 | large chicken |
15ml | cracked black pepper |
15ml | ground cumin |
15ml | lemon juice |
30ml | olive oil |
2.5ml | chili powder |
2.5ml | paprika |
Pinch of cayenne pepper | |
1 | clove garlic, crushed |
Method:
- Cut along both sides of the chicken’s backbone. Discard the backbone and insert metal
- skewers through each thigh and opposing wing.
- Combine all the marinade ingredients in a bowl and rub over the chicken. Grill on the
- barbeque (or in the oven at 160°C) for 20 minutes per side or until tender.
- Serve with mayonnaise roasted potatoes and balsamic purple onion petals.
