1-2-3 cookie dough
(Ideal for heart-shaped biscuit with lemon filling and store bought meringue)
250g | sugar |
500g | butter |
750g | cake flour |
2 | eggs |
5ml | vanilla essence |
Method:
- Cream the butter and sugar until smooth and light.
- Gradually add the eggs.
- Add the flour and mix until just incorporated.
- Chill until ready to roll.
- Shape tartlet shells and bake at 180°C.
Quick lemon and granadilla filling
Whip 500ml cream with the zest of one lemon. Fold the pulp of two fresh granadillas, 100ml thick plain yoghurt and some vanilla (use vanilla seeds) into the cream mixture. Use as a filling for the heart-shaped biscuit.
